While baking cakes and cookies wasn’t practical for overseas shipping, I got creative with a variety of gluten-free cereal treats. One of those special creations is featured here.

Cereal treats, like the classic rice crispy bars, are durable, don’t require refrigeration, and stay deliciously chewy for days. They’re easy to customize, making them a great option for gluten-free care packages. This recipe features the comforting flavors of apple-cinnamon with a touch of dried cranberries and white chocolate for a special twist.
Ingredients
- 6 cups gluten-free Apple Cinnamon Cheerios
- 10 oz mini marshmallows
- 4 table spoons non-salted butter half a stick
- 1 cup dried unsweetened cranberries
- 1/2 cup melted white chocolate
Instructions
- Prepare Your Pan Lightly grease a 9×13-inch pan with butter or non-stick spray.
- Melt the Butter and Marshmallows In a large saucepan over low heat, melt the butter. Add the marshmallows and stir continuously until melted and smooth.
- Mix in the Cereal Remove the saucepan from heat and quickly stir in the gluten-free cereal and dried cranberries until all ingredients are evenly coated.
- Press into the Pan Transfer the mixture to the prepared pan. Press it down evenly using a spatula or a piece of wax paper.
- Drizzle the white chocolate over the cereal mixture to your liking.
- Cool and Pack Allow the treats to cool completely. Cover with a lid or wrap tightly to preserve freshness.
